The main objective of this project is the development of a technological strategy that reduces the accumulation of Biogenic Amines in food products, taking as a model histamine, based on its high incidence, and fresh fish as a matrix, specifically mackerel, sea bream and sea bass.

The project is under development and its completion is expected in 2021, its execution will involve an investment of approximately 331,402 euros, it has been developed with the help of the Center for Industrial Technological Development (CDTI) of the Ministry of Industry, Economy and Competitiveness, and co-financed by the European Union (ERDF Funds) through the Pluriregional Operational Program of Spain (2014-2020).
