Everyone knows the antioxidant power of rosemary extract, which is finding more applications every day, but not only rosemary has antioxidant power. Many of the plants adapted to the Mediterranean climate, with its many hours of sunshine and little rain, have turned out to be excellent sources of natural antioxidant substances.
ANTIOXAN-CL is a range of synergistic blends combining extracts of Mediterranean plants, extracted by traditional methods from natural sources, which delays the appearance of oxidative processes and thus maintains freshness, color and flavor for longer.

Preserving flavor and freshness
A sensorial analysis of Beef Hamburger was carried out to evaluate the effects of ANTIOXAN-3600 CL on the final product. ANTIOXAN-3600 CL produces a large increase in freshness whilst rancid flavors appear in the control and also in the one treated with ascorbate.

Preserving color
Evolution of red meat color was evaluated in beef hamburgers over ten days whilst refrigerated at 2ᵒC (Fig. 3A) and in accelerated study at 8ᵒC (Fig. 3B).
